It's snowing out, but we're on the South Beach.

Really, it's the most lenient, livable "diet" I've come across that addresses more than just weight loss, but things like diabetes, blood pressure and heart health. It makes sense, and has lots of good food options once you get unused to sugar and white flour and processed food. I'm a lover of herbs and spices, anyway, you know.
Some of the recipes in some of the SBD cookbooks contain ingredients that I can't easily get here, but as you start reading through them and realize the basic principle and how often the same ingredients keep showing up, it starts to make sense in a way that will allow you to kind of fudge the recipes and make up your own. The "Quick and Easy" cookbook (linked to below) has a great first section that outlines all the basic ingredients that you should use, and even offers ways to reprogram your thinking in making food so that you can whip together quick "sandwiches" and snacks using these ingredients without having to use a detailed recipe. In other words, once you understand it, you won't be trapped into just using the recipes you can buy, but will be able to make up your own foods with those basic (and plentiful, I might add) ingredients.
Anyway, I thought I'd share a way to have food on hand for the South Beach Diet that's ready and easy to prepare. I am a terrible cook, and this is how I would go about doing this with my limited skills.
Chicken
- Get organic chicken breasts. Cut them in half because they are really big.
- Put olive oil in a bowl. Roll one of the pieces of chicken in the oil.
- Lay the chicken half on a piece of aluminum foil.
- Sprinkle herbs or spices on it. Make sure you are using some that don't have excessive salt or any sugar or other weird junk added. Read the label.
- Wrap the chicken up in the aluminum foil so you have a packet.
- Do this to all of the chicken pieces.
- Put in a freezer bag, and write "Chicken: Bake at 375 for 34 minutes.".
- Get bags of frozen vegetables. Use broccoli, cauliflower, green beans. Do not use carrots.
- Get some bell peppers. Cut them up.
- Mix the vegetables in a large bowl, adding olive oil and herb/spice seasonings.
- Dump the vegetables in a freezer bag, and write "Vegetables: Bake at 375 for 14 minutes."

- Salt-free Mrs. Dash Seasoning Blend: Garlic and Herb
- Litehouse: Freeze-Dried Garlic
- Alexander's Gourmet 4 in 1 Selections: Select Herbs (basil, sage, oregano, rosemary -- each in their own compartment in one container; very handy)
- Simply Organic: Garlic 'n Herb
- Alexander's Gourmet 4 in 1 Selections: Bread Dipping Seasonings, No salt/Low salt
- Dean Jacob's Grinder Fresh: Rosemary and Garlic (This one is handy to use on the table for adding great taste with low salt)
- The Spice Hunter: Salt Free Chef's Shake Blend

In just two weekends, I had four conversations with men in their fifties who were on CPAP machines at night and were diabetic.
Though I still have a few years till fifty, I didn't want to end up like that, even though I was still in the acceptable BMI range and NOT diabetic. I immediately started a low-glycemic diet (similar to South Beach) and have had great results. I dropped eighteen pounds in just three weeks. I only need eight more to reach my target weight! Talk about a simple way to lose weight.
As for that target weight, it's actually what I weighed when I was 19 years old, and my nickname was "Bean" back then, as in "beanpole." So I'm very happy. I'm actually five pounds lighter than I was when I got married almost 12 years ago, so my wife has never seen me this thin. People notice, too.
